Tuna Melt Stuffed Tomatoes

Roasted tomatoes stuffed with tuna, topped with cheese and dill.

Ingredients

  • 1 large tomato
  • ¼ can low sodium tuna, drained
  • 1 tbsp 2% plain Greek yogurt
  • 1 tsp dried dill
  • 1 tsp (5 mL) lemon juice
  • 1 tbsp low fat mozzarella cheese, shredded

Directions

  • Preheat oven to 400°F (200°C). Line a baking sheet with foil.
  • Slice the top off the tomato and hollow out inside with a spoon, then roughly chop the insides.
  • In a bowl, mix together the inner part of the tomato with the remaining ingredients.
  • Spoon the mixture back into the tomato.
  • Place the tomato on the baking sheet and bake for 10 minutes to soften the tomato and melt the cheese.
